About Santei

The meaning of our name, our chef, and a message from the manager.

Our name

The ding is an ancient Chinese bronze vessel with two handles and three legs. It was used to cook food, later for rituals, and became a symbol of royal power. When three conditions come together, a dream will come true — and those conditions are not given to us; we build them ourselves. With a goal, we believe patience, ingenuity, honest effort and hope will follow.

  1. 1

    Conviction

The will to realise a dream

  2. 2

    Cooperation

A team that shares the dream

  3. 3

    Support

    Everyone who supports us

Our chef

Head Chef Yan Tianwei

He served as head chef at the Jinfengshan hotel in Chongqing, Sichuan, and also trained for seven years in Cantonese and two years in Beijing cuisine. His cooking builds on Sichuan cuisine with his own ideas, and is known for its beautiful plating.

干焼排翅 — Shark fin braised Sichuan-style, spicy
北京烤鴨 — Whole Peking duck (2.3 kg or more), served three ways: skin, stir-fried meat and duck-bone soup
全魚 — Whole seasonal fish, cooked to your liking

A message from the manager

Many people think Sichuan food is simply “the hotter the better”. In fact it is built on numbing, hot, sour, sweet, bitter and salty, with more than 24 flavour profiles and over 38 cooking methods — “every dish its own style, a hundred dishes, a hundred flavours”. Our head chef works every day to turn fresh produce from Fukuoka and its surroundings into new flavours with Sichuan seasonings and techniques.
